  • All the nutrition is in the skin of the potato, the rest is just starch. Starch is a form of carbohydrate which chemically is a form of sugar. Carbohydrate are used by the body to store energy as fat. So it's kind of counter intuitive :)

    The green colors is something that comes when the potato is exposed to light and it's chlorophyll and a part of photosynthesis and it's not harmful. HOWEVER it's always followed by an increase in the levels of solanine WHICH IS TOXIC. Google "green potatoes"!

  • is it ok to eat the skin of the potatoes? Or only with this type of potatoe, because i have some potatoes who have a little bit greenish skin inside...

  • This twice-fry thing? It totally works, you guys. I just made them and they turned out pretty much perfect.

    One note of caution: after the first fry these things are like boiled potato sticks. They're extremely delicate and liable to crumble/break if you aren't super delicate with them, and they're also very sticky - don't lay them on paper towels. Put them on a cookie rack or the like and dab them dry.

  • @makeup908 Yeah. And what I like to do is drizzle a little bit of peanut oil on the pan before putting the fries on it and then drizzle some more on top. Not too much though, just a light drizzle. I typically try to make it really crispy by setting it at 400-500 degrees. They brown and get nice and crispy.

  • How: cook the fries twice. Once for 5 minutes at 275 F / 135 C (blanching) and then again at 350 F / 175 C to finish them off.

    I just saved you 3 minutes.

  • If you parboil them in water instead of twice frying, freeze them overnight and fry them at fairly high oil temp they will be crispy throughout like a cheeto, if you don't freeze them it won't work and after freezing they should be fully thawed to room temperature where they become very limp and separating them can be difficult. This is fairly fool proof and they will always come out uniformly crisp and golden brown, the small ones will be the same as the larger ones.

  • Just make sure your ketchup doesn't contain "High fructose corn syrup". One popular brand that DOES use high fructose corn syrup is Heinz. I switched to Hunts because they removed high fructose corn syrup from their ketchup. There are other brands that don't use HFCS. Most organic ketchup doesn't use it.

  • I've found that after you cut the potato, bake them until somewhat translutencet, then fry in very hot oil. They come out very crispy. 'Try-it, you'll like it'

    Great video

    But you never mentioned once in your video that this double-frying technique comes out of Belgium. I'm from Europe and double-frying Frites is standard which, in turn, makes them the best Frites in the world, contrary to common belief that McDonalds' are the best.

    And, as a chef, you should mention WHY you soak the potatoes in water for 30 mins...to get the starch out. Starch in Frites tends to clump them together during frying.

    Removed starch makes the Frites crispier.

Why don't you peel them? ... that's :/ I live in the country that invented french fries (witch is Belgium and not France!) 1) take a potato 2) peel it!! 3) put them in a can with holes in bottom and then under streaming water a bit. (why, it's cleaner) 4) get a towel and dry good. (not a tissue or napkin, paper can stick on it then) 5) 180° Then the guy's right We serve it with everything ... ^____^ jummy

  • @dachicagoan I'm from the north of Sweden and the nearest fast food place is by the city's center 10km away :D I was just tired from the day at uni and the 3km walk home that I couldn't be arsed doing anything about it :P Though of course stomach won the battle in the end....

If someone had 5 dollars, they could get food in 5 minutes from at least 10 places to choose from in a 1 km radius. The problem is that the vast majority of fast food here is horrible for your health. There are even McDonald's in villages that don't have more than 500 people! That's the reason why we have an epidemic of 70% of Americans either being overweight or obese.

  • @dachicagoan I went to Europe and the food was amazing you can find places like the in the US but expensive although the best way to avoid this epidemic for everyone just dont eat the food :)

  • @Syphon787G It's hard to avoid. Most Americans work 9-10 hour work days and spend usually 45 minutes going to work. In the end of the day they are tired and only have 4 hours or so to do anything and with a fast food restaurant every 15 feet, it's too tempting for most Americans.

    I agree ... but there is a solution: Make a list of what u want to eat for next week. Get it and put it in the freezer. In the weekend you can force you're kids to cut the vegetables (also fries raw) or do it together ;) or /and make soup for the whole week. Saves a lot of work over here. + raw vegetables are very mmmm xD (some vegetables can't be put in the freezer but you can look it up)

  • Best recipe for cooking fries (they are actually belgian btw), is:

    Skin a potatoe (best are 'bintje'); Cut them into fries (of fairly the same size); Wash the fries so the starch goes away, dry the fries; Deep fry the fries in filtered ox fat (at 160°C / 320°F) for 5-6 minutes; Let them stand for 10 minutes; Deep fry them again in peanut oil (at 185°C / 365°F) until they are gold-coloured

    so, thats it, recipe from Peter Goossens (3 star chef) and sorry for the bad translations, i'm Belgian ;)
