When I was 9 years old my Great Uncle Michael taught me how to fillet a fish... and that's exactly the way he showed me. Now I want to go fishing because the Mackerel should be here now.

I ve never seen a fish done like that. Head and gil removal work on all species, fresh water? Even I just lop the head off.
