I've wondered the same thing. I can only assume it's to help speed up the warm-up process while not putting too much undo stress on an engine not all the way up to operating temp.
At Miller Motorsports Park this year all four Alitalia Aprilia RSV4 superbikes were backed out of the garage and warmed up simultaneously...the sound was fabulous.

Why do they rev the engines like that? its obviously jsut a few thousand above idle. Is it just to warm up/get fluids pumping quickly?
