I don't know how the magician got the card with the right food choice at the right table. However, I believe that the magician knew which food choice was at which table all along. The host mentioned how strong the food smelled. Both pizza and Indian food have pretty distinctive smells.
Observe how the first guy is concentrating about reading the information "in his head" as the magician is talking to him. At this point the other guys have already opened and read their "information", so they are home free. Another thing that teels me this explanation is right, is to notice how no one of the three guys seem to be shocked by finding their name written on the paper. They actually look like they don't give a dame.

Every magician must perform their trick in front of the judge and the reveal the exact method to them before doing the trick for Penn & Teller. During the show, the judge rules on P&T's guesses via earpiece worn by host Jonathan Ross. The girl is NOT a plant.

thanks to @visitjustin and @utupoe111 i was able to figure it out. all three cards had the same print on it. so table one says the first paragraph, table 2 says the second paragraph and table 3 says the third paragraph. i believe that the people were chosen at random and at the top of each card it probably says something along the lines of "fill in your name and food item as needed" something like that

- Each envelope has the info for all 3 tables, so it doesn't matter who gets what
- They all basically say [insert name] to get the names
- The audience members aren't plants, they just play along (don't want to be the one to ruin the trick, it'd be awkward). You can kinda see the disgust on their faces as some of them do it. No fake surprised faces like a plant would have.
@Adzyz none of the three looked surprised which was kinda weird. :) BUT how would the magician give the right envelope before knowing who will sit where? The food is revealed later so you are not 100% correct to me ;). ALSO this would be considered a cheat if you ask me!
Those two are just such QUICK performers- I love Penn, explaining back to the magician what had happened during the trick, in a tone of voice that would suggest that he and Teller really knew what the trick had been... and then faltering, partway through, as if he was only realizing it AS he was saying it, that they really had NO CLUE what was going on. :D
I dont' trust any magician who "randomly" chooses somebody from the audience himself. The only "random" choosing I find believable is when the magician tosses a ball into the crowd and they throw it around a bit or whatever, like David Copperfield.

All of them were very careful when they put their envelopes and messages back on the table, so the message was covered by the envelope. Not satisfied, the magician covers them with the food containers right after removing them.

@visitjustin Well if that photo hasn't been edited, then the only option is the audience members where in on it because they didn't even read out what was on the cards at all. That card clearly says sitting at table number 3 enjoying pizza, but is sat at table number 1 who had tikka masala, so then the question is why were the names blanked out if the whole thing was rehearsed and why did the girl get the order wrong?
Obviously the third goes to the leftover space. I'm not sure how he's doing the other ones but I think it's safe to assume it's the power of suggestion (NLP).
@mekkabon I think you underestimate NLP. Lookup derren brown on youtube. He's an expert at it (does more stuff like this). He did a special on tv that would blow your mind... makes this look like child's play. (and more truely random audience members too)
@ritherz - You do realise Derren Brown doesn't actually use any NLP as part of his magic act, right? He sells DVDs explaining how to do his tricks, and none of them rely on suggestion. That's just misdirection so people focus on his language instead of what he's doing with his hands.
@RFC3514 I believe most of his acts revolve on misdirection and magic tricks, however there are a few NLP's that he slips in when he attempts tot make you think of a card. I must say that most of the time he uses a swami gimmick. When he is "reading" youre mind.

@utupoe111 - Actually, you don't need all that. Each audience member only needs to fill in his name. The cards can simply have 3 messages, one for each table, with the correct food. If they are willing to fill in their name, they'll also be willing to pick the correct message (labeled with their table number). I think P&T underestimated people's natural tendency to play along and "not ruin the trick" (which is basically how stage hypnotists make a living).
@utupoe111 You are the reason why some tv judges need an extra guy or girl with them, there is always room for error and you showed that. I would have figured they would have checked that shit out.
Keep in mind that during episode, whenever a random audience member is involved, they usually pick the audience member before the taping occurs or pause the taping so they can mic them up without interruption.
That, and the discussion process between Penn & Teller isn't actually that short. They edit it out in post production. They may have very well suggested plants in that time frame and were told no by the producers (who are told how the trick works), which was then edited out for time.
The initial woman should be chosen more random (no interaction from himself) - I believe Penn and Teller dont stage stuff, but it would make the trick even more stunning
I'm pretty sure the producers of the show, as well as the host, are in on how the trick is actually done. I remember watching other episodes where the host alludes to knowing how the trick is performed. I also don't think the show would have this trick on the show if it were simply just plants, or having the men read generic cards. There is some sort of "trick' and we can't figure it out which is why we are watching and he is the magician with 500,000 sold magic books.

At 1:48 the magician says " I'm gonna do that by choosing a WOMAN (and in that moment he looks directly in to Catherin) completely random from tonight s audience." Than he looks around like he is trying to find somebody ( just bad acting ) and again looks at her and than chooses her!
And also, he didn't even do anything! By the time he had the new info (the guy's names) he was no longer in contact with the envelopes. Therefore he didn't, it had already been done.
The audience is certainly rigged. Reason 1: notice how the 3 guys don't even let off a single emotion when they read their cards and it had their names on it? Doesn't make any sense. Reason 2: notice at the and the women replies "oh yes i was chosen at random". She says it as if it was a line she was told to say
Nah, the fact that they don't show any emotions makes me think even more that they AREN'T stooges. Who would hire bad actors? I believe it is a case of dual reality. The cards probably had something along the lines of "[insert your name here] will be sitting at table n°..." written on them.
The members of the audience, either thinking the real magic trick has yet to come or not wanting to spoil the trick, plays along. The audience, however, perceives this differently
the only way I can figure out how it was done is that maybe the three guys had money in the envelops and were told they could keep it if they played along.
@Kiddeth do you think the selected audience members would speak out in the middle of a set, blowing the magician's cover? 99 out of 100 wouldn't. my guess is the notes said "(State your name here)" etc.... the fact the notes are not shown to the camera is cause for extreme suspicion. these types of deceptions don't deserve to be labelled as "magic". we want real talent please mr. penn & teller.
@88jezzzz sorry, you mightn't but I certainly would just say its bullshit to the audience. Maybe he planted 5-10 guys around her, they then looked at her real willingly while she chose (then they played along at the end) that's my guess.
How to do it w/o audience plants (my theory): he knows what food is where, and there're only 6 different possible plate positions (ABC,ACB,BAC,BCA,CAB,CBA)- so he has 6 sets of 3 envelopes in his suit. He picks the right set, and it doesn't matter who gets which envelope because each envelope says the same:
"At table 1 read: My name is [say your name], and food is A
At table 2 read: My name is [say your name], and food is B
At table 3 read: My name is [say your name], and food is C"
I think the letters instructed the guys to read the note and fill in the blanks properly.. with their names and the dishes that were labeled for them to know what was under it.. but hidden from the audience. Willing voulenteers.. even random people.. tend to comply with performers requsts if they get to see how it is done. I mostly think this because none of the guys seem to be surprised.. or even try to act surprised like a "planted " assistant would.
In all the past episodes i have noticed every person they pulled out of the crowd at "random" had a microphone pack on their belt. Seems like its not so random to me, if the producers had time to mic them.
Each envelope probably had choices saying "if you're sitting at table x, say this (insert name)". Probably just nice guys playing along. If I was Penn or Teller, I'd have asked to see the envelopes

It's called NLP. If you listen to how he emphasizes his words, I believe that's how he's doing it.
I actually guessed exactly what she was going to guess for the numbers as that's the most evident part.
Skip to 2:20 Which table to serve which dish TWO.
Then 'Lets go back for the next ONE.'

@utupoe111 also you must be wrong about the food! The first guy totally has no time to read the hardest to pronounce food. He is looking the whole time at the envelope! If everyone must insert the information they must get at least a little confused and/or read at least slower ;).

@utupoe111 - Actually, you don't need all that. Each audience member only needs to fill in his name. The cards can simply have 3 messages, one for each table, with the correct food. If they are willing to fill in their name, they'll also be willing to pick the correct message (labeled with their table number). I think P&T underestimated people's natural tendency to play along and "not ruin the trick" (which is basically how stage hypnotists make a living).

Keep in mind that during episode, whenever a random audience member is involved, they usually pick the audience member before the taping occurs or pause the taping so they can mic them up without interruption.
That, and the discussion process between Penn & Teller isn't actually that short. They edit it out in post production. They may have very well suggested plants in that time frame and were told no by the producers (who are told how the trick works), which was then edited out for time.

I'm pretty sure the producers of the show, as well as the host, are in on how the trick is actually done. I remember watching other episodes where the host alludes to knowing how the trick is performed. I also don't think the show would have this trick on the show if it were simply just plants, or having the men read generic cards. There is some sort of "trick' and we can't figure it out which is why we are watching and he is the magician with 500,000 sold magic books.

The audience is certainly rigged. Reason 1: notice how the 3 guys don't even let off a single emotion when they read their cards and it had their names on it? Doesn't make any sense. Reason 2: notice at the and the women replies "oh yes i was chosen at random". She says it as if it was a line she was told to say

Nah, the fact that they don't show any emotions makes me think even more that they AREN'T stooges. Who would hire bad actors? I believe it is a case of dual reality. The cards probably had something along the lines of "[insert your name here] will be sitting at table n°..." written on them.
The members of the audience, either thinking the real magic trick has yet to come or not wanting to spoil the trick, plays along. The audience, however, perceives this differently

@Kiddeth do you think the selected audience members would speak out in the middle of a set, blowing the magician's cover? 99 out of 100 wouldn't. my guess is the notes said "(State your name here)" etc.... the fact the notes are not shown to the camera is cause for extreme suspicion. these types of deceptions don't deserve to be labelled as "magic". we want real talent please mr. penn & teller.

How to do it w/o audience plants (my theory): he knows what food is where, and there're only 6 different possible plate positions (ABC,ACB,BAC,BCA,CAB,CBA)- so he has 6 sets of 3 envelopes in his suit. He picks the right set, and it doesn't matter who gets which envelope because each envelope says the same:
"At table 1 read: My name is [say your name], and food is A
At table 2 read: My name is [say your name], and food is B
At table 3 read: My name is [say your name], and food is C"

I think the letters instructed the guys to read the note and fill in the blanks properly.. with their names and the dishes that were labeled for them to know what was under it.. but hidden from the audience. Willing voulenteers.. even random people.. tend to comply with performers requsts if they get to see how it is done. I mostly think this because none of the guys seem to be surprised.. or even try to act surprised like a "planted " assistant would.

In all the past episodes i have noticed every person they pulled out of the crowd at "random" had a microphone pack on their belt. Seems like its not so random to me, if the producers had time to mic them.

06:15 - 1 stripe, second plate
06:34 - 3 stripes on last plate
Letters must contain instructions on what to say regardless of the table placement.
