Great idea using the ground pork. It's Hatch chili season here in central Texas and our local supermarket roasts them every weekend. It's interesting that you used tomatoes and no onions. I'll give this recipe a try, should be good over rice.

Scott, here in the south west, we don't make it like that....try using moteca in stead of olive oil, because it really brings out the flavor. ...but good try.
Hi Scott, I am a big fan of yours and am very familiar with this cuisine in particular. You could try and add potatoes to it and some onions and you'd have Green Chile Stew.
Also, the dry Red Chile Pods from Hatch are also fun to work with, but you might need a blender for that.

what you made does resemble green chile stew though, its very popular here, it includes potatoes,green chile,and chunks of pork and eat it with tortillas or make burritos out of it.
thank you so much for the basic recipe, but i was wondering if you come up with a recipe for me. the particular way i want this dish prepare is for my patients that i have. My patients suffer from a wide variety of illnesses. I am a colorado care giver. If you could find way to add marijuana to you Green Chili recipe so it would give my patients some warm feeling while eating the dish and then afterwards not be in pain any more. If you could right me back:)
very cool. My family lives in Pueblo, and I have my own green chile recipe that I've made for years. It was just something I put together trying to re-create what I've had there. I've been looking for a way to make it more authentic, like what I've had in Colorado. I will be trying this very soon. Thank you!
I put mine over fried potatoes,,,I also add flour to thicken ,,yours look so yummy! thanks for posting.. : )

try squashing the tomatoes with your hands by squeezing(careful not to get all over) - hands on!

and when we make the chile with potatoes, we call it calito - idk why though lol
most of my fam comes from walsenberg, co and new mex, and this type of chile and calito was passed down generations.
