Prevent Potatoes From Sticking to the Pan: Put diced potatoes in microwave resting on paper towels to absorb liquids for 4-5 minutes on high. This method seals in the starch. They should still feel raw and uncooked. The other benefit is that will you need less oil in your pan. This also works great for French fries or plain hash browns. They will never stick! Very nice. I think I prefer your method of putting an egg or two fried over easy rather than put the eggs into the skillet along with the corned beef hash.
Tell me though, were the potatoes boiled prior to you cutting them or did you throw them in raw? thanks
@Gweezian - the eggs over-easy on top are delish for sure - I cook the cubed potatoes from raw for a crisp texture - but no problem whatsoever pre-boiling - it will only reduce the cooking time - and will not compromise the crispy texture; either way works well :)

@mrUUbanks - if you mean special "spice" it's a blend I make from chili powder - you can simply use a little chili powder blend you find in the grocery store - Emeril's SW spice is awesome :)

Oh, and the rocket speed of which "I appear" to be chopping! LOL! There are plenty of tools to dice up potatoes if you want (Vidalia Chop Wizard does a good job); if by hand - cut the potato in half- then slice that half keeping it together - turn and slice again grid like once or twice more - that'll do the trick :)

I'm very sorry to hear about your mother. I lost my Mom twelve and a half years ago and remember the wonderful dishes she cooked. She and my Dad were both great in the kitchen!
My Mother never taught me to prepare anything... It wasn't her fault though, it was my Dad. He was the "King" and we were his servants, including Mom. We weren't allowed to be in the kitchen while she was preparing meals or anything. My brother and I did the lawn and outside work, my sister had to help Mom with the cooking and cleaning. Even when we got older, it was a different life when he was home. We couldn't even get ourselves something to drink; Mom had to do it.
And I salute you for honoring your beautiful mother(who instilled in you to raise such a beautiful, sweet family in the background! )And my son and I love over easy, it's the best way to go (imo)!! XO

called stovies in the UK....but I cooked the potatoes in milk and added a bay leaf to them, then added onion sauteed in butter with the corned beef....

I love cornded beef hash! This looks great! Good for you keeping up your mom's tradition. I don't know what i would do without my mom. But you are doing great keeping her spirit alive! And i am going to try this this weekend!Thank you so much!

I love corned beef hash! my mother used to make it for me when i was young sometimes on sunday morning. I'm gonna try your recipe because it looks absolutely fantastic. I'm a huge paprika lover so you can bet I'm utilizing the powers of the spice. Anyways, thank you for sharing your great video, looking forward to more. :]

Anyways I use the same recipe as you do. No joke like same exact except the pepper. Great minds do think alike lol.
