After you throw the barrel, press and hold the Y button. While you still hold that button, hop onto it, and when you reach Rambi press B to hop back on Rambi, then STOP pressing the Y button.
Once when DK was riding on the back of Horny/Glitchy Kong, Diddy said "Oh no DK, it looks like you're bunnim' him!" And DK never got to ride the Glitchy Kong again, even if he reeally did want to.
