Point of information - olive oil works just fine. the oil is just to cook and I use olive oil (I'm Taiwanese, i have cooked stir fry all my life). You can also add everything together, really - just make sure the stuff that takes longest to cook gets cooked first. Getting the wok nice and hot 1st is the important part - that's what's cooking the food.
