If you know how to make enchiladas you would know that the tortilla needs to be fried.... the only difference here is that the tortilla is fried after adding the sauce... but it is the same as frying the tortilla first and then passing it through the sauce as far as the amount of oil it absorbs... and taste wise this way is more delicious... and for those of u that argue that this is not the way to make enchiladas... yall have'nt been out of ur damn Ranch... Enchiladas are made diff in ea State!

We don't use fat, we use canola oil, which is tasteless and don't change the natural flavor of the tortilla. If you keep your oil at 360 F. the oil won't be absorbed by the tortillas. We end up almost with the same amount of oil that we started with.

Now the pan we bought it at a Flea Market here in Grand Prairie, TX at a mexican goods store. It cost like 80 dls. This is a special pan for cooking enchiladas.
I know this dish is not the most healthy conscious dish, but is not that bad. If you keep your oil hot, the tortillas absorbs only a minimum amount of oil. You can stuff them with shredded chicken breast and use light sour cream on top and serve them over a bed of lettuce. Remember, the doctor want us to die healthy, impossible.

6 Chiles anchos
6 Chiles Guajillos
2 Cloves of garlic
Cuminn
Salt
Pepper
Just boil the peppers for about 5 minutes, if you over boil them they will get bitter. Blend them with all the ingredients with a little water. Strain them and it is ready. This is a simple sauce. If you don't like your enchiladas fried, then you have to cook the salsa for 15 minutes before assembling your enchiladas.
