  • Compound butter here is a loose term for softened butter mixed with chopped herbs (prolly sage and thyme). Maybe a cup of butter and a tbsp of herbs. It's really to taste, use more herbs if you want stronger flavor. The stuff in the bottom of the pan is aromatics, 2 parts onion 1 part celery 1 part carrot. They flavor the pan juices which you will then use to make gravy. Roast til thigh temp sez 165. Let rest outside oven for AT LEAST 15 mins (30 is better) before carving or you'll lose all you

  • The compound butter looks like it has the usual suspects, sage, thyme, maybe some lavender. I prefer to use a melted butter/olive oil mixture with herbs that I slather all over the turkey. I also make stock from the turkey neck, an onion skin, tops of celery and herbs. Then I strain that stock, put it into an injector and inject my bird before roasting it. I never stuff the bird, I always do the stuffing separately. I roast my turkey in a Nesco Roaster - perfect every time.
