Compound butter here is a loose term for softened butter mixed with chopped herbs (prolly sage and thyme). Maybe a cup of butter and a tbsp of herbs. The compound butter looks like it has the usual suspects, sage, thyme, maybe some lavender. I prefer to use a melted butter/olive oil mixture with herbs that I slather all over the turkey. I also make stock from the turkey neck, an onion skin, tops of celery and herbs. Then I strain that stock, put it into an injector and inject my bird before roasting it. I never stuff the bird, I always do the stuffing separately. I roast my turkey in a Nesco Roaster - perfect every time.
