  • @legoman844 How I prepared the batch from the video above was basically gut them, take the heads off, then give them a good wash, then I prepared a nice light tempura batter, coated them well and threw them in a fryer using olive oil until nice and golden brown. They come out looking like battered shrimp. Then just dip in your favorite style of tartar sauce (I just make my own using reduced fat (light) mayo and relish) and they taste awesome! Kinda like little smelt nuggets haha..

  • @legoman844 Well what you can do for the size that we caught is basically gut them as any other fish, just slit the belly and pull out the guts, and you can either remove or leave the head on (I opt for removing it) and then you can batter them and fry them whole with the skins, bones, everything! They are so small that the bones just dissolve while frying.
