So basically the problem is that you're losing balance? I'm not sure whether that matters but it seems you're leaning when spinning. Perhaps going for a straighter spinning position might help. I'm guessing it doesn't really affect you in 360s but even small things might affect 720s. Also, I'm not sure but it seems your feet aren't squeezed together. I'm not an expert but theoretically having all the mass as close as possible should increase your spinning speed and probably decrease variance.
