  • I am sure there were people who complained about julia's double dipping but back then, she was on tv, not the internet. lol

  • actually triple dipping. lol. if your cooking for your family, maybe ok, but not if your having company.. LOL.... he does it almost the same way I do. That water and flour HAVE to be mixed well and you have to stir while pouring it into the pan or it will clump. he should mention that if your having company, don't double dip.

  • so what if he double dipped -_- there is more bacteria in the gravy, dip, salsa or what ever than your mouth could ever give

  • Why does anyone care that he double dipped? It's not like you are going to be the one eating it anyway. Sure, maybe it's not the "correct" thing to do, but like he said, he is in his kitchen so he gets to do it. Plus, I saw a video where Julia Child was tasting something. She sipped a bit of it, and put the rest of it back in the pot. It is the beef bourguignon recipe at about 35 seconds into it. If Julia Child can get away with it, I am sure it is okay for Jack to do it!

  • @jamielynnp24 Because, no matter how clean you think your mouth is, you can make somebody VERY sick doing that. If you are okay with that so be it, but he is running a show, teaching people... He cannot be teaching people that is okay.

What if all 11,000 or so people that have watched this have double dipped? We must contact the CDC AT ONCE! What if all of this double dipping has caused an epidemic of some sort? Eeeek!

  • To complain about Jack putting the spoon in after tasting is probably one of the most ridiculous comments I've read on this channel. It's quite stuck up if you ask me. The people saying this are OBVIOUSLY not home cooks, otherwise they wouldn't be complaining. If you had to cook for your entire family, taste everything, and do the dishes afterwards, you wouldn't say to use another spoon. I understand Jack...ignore these people, they know not.

  • Instead of flour, you can use cornstarch too in place of it. That way, you don't really get that raw flour taste.

  • AWESOME! :) Much better! Alas, you still didnt use a roux :( a Roux offers a nicer overall flavor than just a flour and water mixture.

    Also, for nice creamy gravy, you can add milk rather than water to thin it out, too.

    Personally, I start with some butter, a splash of red and/or white wine, a pinch of garlic, some chili pepper, boil off the alcohol, take it off the heat and add the flour, then add a bit of milk to thin, and finally the stock/drippings/oxo.

  • @Etimos oh yeah man. A roux is the way i always go. Well except if I'm in a hurry.. Anything tastes more awesome with a roux. And the smell is also so awesome... But it is also dangerous.

    As a kid, i was so fascinated by that smell, that i sneaked into the kitchen, took a spoon and tried the HOT ROUX................... you only do that once in your live :(

  • Jack!!! Love your cooking episodes. I see everyone else is commenting on the "spoon" issue, so i will leave that alone. My mom always taught me to make a roux with the flour to get rid of the flour taste. Also, you should let the gravy come to a light boil so the gluten in the flour will reach it's full thickening point. "Mamma" says this is so leftovers are not super clumpy.

  • The spoon test actually is called "nappe" in culinary terms. Swipe through the coated back of the spoon and watch if (and how fast) the sauce runs together again.

    Also if you want to avoid getting lumps, let the drippings get hot first and slowly pour in the cold(!) slurry.

    Either way your gravy might taste a little floury. To avoid that, make a roux and use that to thicken the drippings. There should be a lot of videos showing how to do that.

  • because the gravy is still on the heat, the double dipping isn't that big of a deal. Any germs and enzymes will get turned off before anything nasty happens. Since this is being made for a home setting and not a professional kitchen this is okay.

  • @ThorMaxx room temp can still cause it to clump. The cold water does a better smoothing job. it doesn't have to be ice but it safer then people using tap water.

  • I dont wanna yell at you for using the spoon again after having it in your mouth.. Though its not really sanitary, that is not the reason why I would.

    I would because saliva is a part of you digestion, and it will break down the binding you made with the flour!

    I doesnt hurt to much though, but if you were to make gravy for the next day, it could break down the binding. Just a tip!

  • @Rovo188 Thats more of an issue if you use the corn starch, as Amylase (an enzyme present in saliva) will breakdown starch into glucose, making the gravy sugary and sweet, which could go either way, Make it taste amazing, or make it taste horrible)

    However, if you did bring the gravy close to boil, the Amylase would denature, so you will most likely be okay.
