what exactly is the "pickle crisp" i know i heard you say it was pool shock? i wanna try doin pickles this way, i just wanna make sure i get the right stuff.

I'm in charge of the community gardens in Greenville Ms. I have three gardens and I going to have canning lessons on how to pickle cucumbers and tomatoes and okra. I loved your lesson on dill pickles and it gave me a lot of good advice. Do u have some videos on okra.
@annjennings1000 Nope, I drink the beer and then put them in a plastic bag which is put into the fridge until i get enough together to can. I don't like to slice up my pickles, I like to can them when they are little. Yankees are not allowed to grow Okra, General Sherman will have any Yankee caught growing Okra shot. The only time I can enjoy Okra is when I sneak down to Memphis.

I have a couple daughters around your age and I love them very much. I never show my face because I have really long ear and nose hair and look like Shrek. @deke76 I can't buy pickles as good as the ones you can make. Are you getting cucumbers where you live already?? I have many months yet before cucs are in, we have been planting all the seeds for this springs plantings though.
I know the sodium hypoclorite is used for water sterilization too, but it's not as good for you in a long term senario.
Yeah the powder is better - agreed. I live in Florida, so we have cukes here. I bought "pickling cukes" but they were larger than the ones you grew. A few went in whole and a few were halved, but I quartered most. They look good - can't wait to try them. I used less sugar than you and also added a bit of peppercorns from a jar of pickling spice. So so looking forward to trying them. I may also use your marmalade recipe as a gift for my Dad.
I see that you let them sit for 3mo. is that the least you have ever gone? How do you think they would be at 2mo? We have been prepping since the 2008 election I now want to start doing some canning of my own. I thought that I could motivate my younger daughter to help and letting her compete at the fair the end of February. Do you think that would be enough time to sit. Because of the early freeze there are no baby cukes. Would this work with the biger cukes cut into spears?
@wideawake73 Take your cloves, push them into the ground about an inch deep and 6 inches apart. Late fall is best, but can be done in the spring as well. There are 1000's of videos out there on this already and plenty of books and web pages with the same info.
So I just finished grandpa's recipe handed down for bread and butter pickles and I tried Yankee's recipe as well........and the conclusion.......THUMBS UP! Great recipe, thanks for sharing it!!

Sorry I missed this video.... I've doing this for weeks now and you are right the taste is so much better than the factory crap. So far every batch has been a little different as I'm trying different things. I haven't done full pickles only sliced and quartered, bread and butter, dill, sweet and spicy, kosher... and I still have about 20 big cukes lol. Awesome video man, now if I can only get around to filming a batch.

@boomd1791 I have never used any kind of "pickle crisp" before, not even alum. But my wife brought it home and I thought I would give it a try. I usually trim the flower end off, but it was nice to skip that step. I guess I will see if it works. The only ingrediant on the pickle crisp says; calcium chloride which is a salt used for pools and pickle crisp, go figure.

Do you have a favorite recipe book? I have been looking at a lot of recipes, and it really seems like you can "can" just about anything you want as long as you leave enough head space and uae the correct canning procedure ie: pressure or boiler...

@AwakeAndDangerous If I did not have the experience of growing up with a canning and preserving family, I probably would not know the difference and the products would not be as good to me. My mom's recipes are half the salt as most of the BALL book recipes.
@MrBradyhimself I try to maintain a year supply of back up food, based on the shelf life. And I am also saving extra dry goods (rice and beans) for neigbors and friends now. When we have abundent years of something, like tomatoes, we will do extra. A couple years ago for example we put up almost 200 quarts of tomatoes! Storage is the biggest issue. You really have to make a commitment to change from a immediate need "go and buy" culture to a store and rotate.
YP, something you might want to do, is to help people understand the bigger picture (in terms of cost savings) of growing as much food as we can, ourselves (or simply supporting our local market) than buying everything at the local stores. I know you mention bits & pieces there, but not much beyond that. Could you do a video that suggests what the average family of 4 (& folks living with enough yard space to grow it) could look at, in costs of DIY vs. Store Bought?
@Diatribe1974 Well, I wouldn't hold your breath on the vid. But I will say that if someone is trying to be self sufficient and planning for their family there are plenty of examples and resources in the form of books adn even video on YT.
The best way to approach cost savings is to think about it like this. a couple packs of seeds will provide more than a family of four can eat for the season just messing around in your backyard. If you harvest the seeds it gets cheaper.
@Yankeeprepper Oh, I can easily understand what kind of overall cost savings the average person could see in their lives, as most of my dad's side of the family grew up on the farm (my dad, uncle & both aunts were the first of them to actually doing something other than farming), but I was given a huge eye opening experience growing up as to how much food one person can grow, but also an appreciate for those who are self-sufficient as a result. Most people aren't as lucky, is why I asked.
Good vid, we just did 60 quarts of tomatoes this last week. Was our first time canning. We have already had spaghetti, and the sauce we made was far better than the store bought that we loved before.
@jplerwill That sounds great, we do alot of tomatoes too. More than anything. We use it for bases in soup, pizza sauce, spag sauce and just plan stewed tomatoes and bisquits. And you are right, it is WAY better than any thing you can buy.
Great recipe....that's some good lookin' pickles. The only thing I do different is I throw a few whole black peppercorns in the bottom, and my pickles are iced down in a huge bowl, for a couple of hours before I put them in the jar. They're super crisp!

you are right about the christmas gifts.......my folks look forward to our deer jerky presents every christmas.........nothing bought(except under 3).........the pickles looked great........
Good for you! We are at 40 quart jars so far this summer. You are really good about picking nice little cukes, some of mine got too big and I had to cut up a number of them. They are better whole. We aren't huge pickle eaters, but we have so many we better get started eating. I've never had such a huge cucumber crop before. I've been making fresh salsa with an added cuke and caprese salad with cucumbers also to get rid of them. Wish they could be frozen or dried.
@thegreenfamilybooks I make the sweet sliced pickles with the big ones. But the spear dills are good too! I have more than a few of those on the shelf too. It's all good when "you " make it.

Your pickled eggs idea reminded me of a mate of mine in the Army that use to get through a whole jar of pickled eggs each weekend after drinking some off Englands finest Ales.

@stuartsbushcraftblog I used to like pickled eggs with beer. Tried to make some from memory of a recipe I head one time just tossing a bunch of stuff in gallon jars with vinegar, they were horrible. (Kept them for a couple years eating them once in a while when I forgot the last experience until I got smart and dumped the evil things) but whooooah, they were the cause of worse emissions than regular bar eggs by a site.
Pickled eggs increase your carbon footprint ten fold and leave a toxic residue in your boxershorts.
The worst part of my Army mate was that he would also drink the vinegar after the last fart grenade was consumed,his intenstines must have looked like a Piccasso painting after years of such abuse.

So were my eggs, they had a lot of hot pepper involved as well & other spices. I only ate them after I was a little pickled myself and forgot really what they were like, can't believe I didn't at least remember the hell in the morning they caused me. I tried so many times to make something out of em, never good.

Hehe I don't really like the taste of pickles, so I'm going to try and see if I can "learn" to like them by making a batch of them sometime. Its weird, but I like cucumbers but not pickles. Something about the sour taste. Do you recommend any food that goes good with pickles to make it more enjoyable (excluding burgers hehe).

I did hundreds of eggs one year, or maybe dosens lol, they were like 20c a dosen for Easter one year & I cleaned up. Oh yeah, it was 144 eggs, a gross lol. Anyway I tried to make bar eggs, they SUCKED because I did it wrong. They were so dang hot and not to good, but I ate a lot of them just because lol they really trashed my stomac & left me howlin in the mornin as they moved on through, if you know what I mean lol. A couple of years ago I caned sliced green tomatoes for frying and gave some of them out as Christmas gifts. All I have heard since then is how about some more of those caned green tomatoes for Christmas. Most people will forget what they got for Christmas by New Years but they don't forget getting home caned foods. Great video Yankee, they look great and I am sure the taste as good as they look.
Yankee, I totally agree with you about the Ball Blue Book. My grandmother didn't even process her hot pack sweet pickles, Just sealed them up and turned them upside down on a towel on the table for a day. They sealed every time, no one ever got sick and died from that either. I used to watch her do the same with jam. Hot jars, hot product, hot lid, upside down on the towel. ping, ping, ping! Food Safety Nazi's is right! Pickles look great. Need to do my bread and butter here soon.
If you want crisp pickles, add 1/4 teaspoon of granulated alum per 12 cups of your water/vinegar pickling brine. Alum is found in the seasoning area of the grocery store. Learned this from an old grandma, works every time.
When I make sauerkraut, I put a couple of whole heads of cabbage down in the crock, buried in the shredded cabbage. When it's done you have whole heads of "krauted" cabbage. You can then use the whole leaves to make a number of recipes, like cabbage rolls. We used them to make an Armenian dish called Sarma. Great stuff. Thanks for the recipe.

Great vid! I just put up 3 jars of chicken stock, first time, from last nights chicken. Wife looked at me like I had three heads when I told her my intentions. Now that they're on the shelf, she's ready to start cooking with them.
My mother has been trying to get me into canning. I really would. But the start up fee for doing real canning always made me put it off. I really should get on the ball.

I just started making my own pickles... its a fantastic idea, and you can make them to what you like.
The hardest part, is letting them sit on the shelf for a month or so to let all the flavour mix into the pickle.
Cant wait to start opening mine.

Sorry I missed this video.... I've doing this for weeks now and you are right the taste is so much better than the factory crap. So far every batch has been a little different as I'm trying different things. I haven't done full pickles only sliced and quartered, bread and butter, dill, sweet and spicy, kosher... and I still have about 20 big cukes lol. Awesome video man, now if I can only get around to filming a batch.

@UrbanCombatSurvivor Yes, lots of things can be pickled, even meat. We did 16 pints of pickled beets last weekend. I love beets.

@camokbear1 This seems bizarre to me at this point, I did not make a video on Eziekel 38 and 39. (I have made mention of Ezekiel 7:19 is a prophecy already passed, which I used to demonstrate that when the SHTF, gold and silver are worthless.) Eziekel 38 and 39 is a biblical prophecy that has not occurred, and describes Russia and Iran (other Arab states) attacking Israel. God will defend Israel during this attack and the world (including the Jews) will find out where God stands.

@boomd1791 I have never used any kind of "pickle crisp" before, not even alum. But my wife brought it home and I thought I would give it a try. I usually trim the flower end off, but it was nice to skip that step. I guess I will see if it works. The only ingrediant on the pickle crisp says; calcium chloride which is a salt used for pools and pickle crisp, go figure.

Do you have a favorite recipe book? I have been looking at a lot of recipes, and it really seems like you can "can" just about anything you want as long as you leave enough head space and uae the correct canning procedure ie: pressure or boiler...

I got into preserving 2 years ago with the Ball book, but I have the same feeling about them being safety nazis, and recipes being too salty as well.

@AwakeAndDangerous If I did not have the experience of growing up with a canning and preserving family, I probably would not know the difference and the products would not be as good to me. My mom's recipes are half the salt as most of the BALL book recipes.

@MrBradyhimself I try to maintain a year supply of back up food, based on the shelf life. And I am also saving extra dry goods (rice and beans) for neigbors and friends now. When we have abundent years of something, like tomatoes, we will do extra. A couple years ago for example we put up almost 200 quarts of tomatoes! Storage is the biggest issue. You really have to make a commitment to change from a immediate need "go and buy" culture to a store and rotate.

YP, something you might want to do, is to help people understand the bigger picture (in terms of cost savings) of growing as much food as we can, ourselves (or simply supporting our local market) than buying everything at the local stores. I know you mention bits & pieces there, but not much beyond that. Could you do a video that suggests what the average family of 4 (& folks living with enough yard space to grow it) could look at, in costs of DIY vs. Store Bought?

@Diatribe1974 Well, I wouldn't hold your breath on the vid. But I will say that if someone is trying to be self sufficient and planning for their family there are plenty of examples and resources in the form of books adn even video on YT.
The best way to approach cost savings is to think about it like this. a couple packs of seeds will provide more than a family of four can eat for the season just messing around in your backyard. If you harvest the seeds it gets cheaper.

@Yankeeprepper Oh, I can easily understand what kind of overall cost savings the average person could see in their lives, as most of my dad's side of the family grew up on the farm (my dad, uncle & both aunts were the first of them to actually doing something other than farming), but I was given a huge eye opening experience growing up as to how much food one person can grow, but also an appreciate for those who are self-sufficient as a result. Most people aren't as lucky, is why I asked.

Good vid, we just did 60 quarts of tomatoes this last week. Was our first time canning. We have already had spaghetti, and the sauce we made was far better than the store bought that we loved before.

@jplerwill That sounds great, we do alot of tomatoes too. More than anything. We use it for bases in soup, pizza sauce, spag sauce and just plan stewed tomatoes and bisquits. And you are right, it is WAY better than any thing you can buy.

Great recipe....that's some good lookin' pickles. The only thing I do different is I throw a few whole black peppercorns in the bottom, and my pickles are iced down in a huge bowl, for a couple of hours before I put them in the jar. They're super crisp!

Most large supermarkets carry regular non-iodized salt. It's a lot cheaper.

Good for you! We are at 40 quart jars so far this summer. You are really good about picking nice little cukes, some of mine got too big and I had to cut up a number of them. They are better whole. We aren't huge pickle eaters, but we have so many we better get started eating. I've never had such a huge cucumber crop before. I've been making fresh salsa with an added cuke and caprese salad with cucumbers also to get rid of them. Wish they could be frozen or dried.

@stuartsbushcraftblog I used to like pickled eggs with beer. Tried to make some from memory of a recipe I head one time just tossing a bunch of stuff in gallon jars with vinegar, they were horrible. (Kept them for a couple years eating them once in a while when I forgot the last experience until I got smart and dumped the evil things) but whooooah, they were the cause of worse emissions than regular bar eggs by a site.

@stuartsbushcraftblog lol toxic residue & carbon footprint, so true. Oh man, drinking that is harsh/crazy! I tried drinking vinegar once & it was nasty & gastronomically destructive. So were my eggs, they had a lot of hot pepper involved as well & other spices. I only ate them after I was a little pickled myself and forgot really what they were like, can't believe I didn't at least remember the hell in the morning they caused me. I tried so many times to make something out of em, never good.

Hehe I don't really like the taste of pickles, so I'm going to try and see if I can "learn" to like them by making a batch of them sometime. Its weird, but I like cucumbers but not pickles. Something about the sour taste. Do you recommend any food that goes good with pickles to make it more enjoyable (excluding burgers hehe).

I don't believe in pickles, I believe that some place there are a bunch of pissed off Martians who can't procreate and that they are gonna cause trouble sooner or later. THAT is what I believe!
All that aside ... COOL! : ) I'm gonna pickle something, I don't know what. I don't have any cukes or martians, but I have to apply vinegar to somethin and pickle it. Peppers, Eggs, maybe Collards? I'm going to pickle something, I am inspired. That's some cool jars a pickles : )

I did hundreds of eggs one year, or maybe dosens lol, they were like 20c a dosen for Easter one year & I cleaned up. Oh yeah, it was 144 eggs, a gross lol. Anyway I tried to make bar eggs, they SUCKED because I did it wrong. They were so dang hot and not to good, but I ate a lot of them just because lol they really trashed my stomac & left me howlin in the mornin as they moved on through, if you know what I mean lol. A couple of years ago I caned sliced green tomatoes for frying and gave some of them out as Christmas gifts. All I have heard since then is how about some more of those caned green tomatoes for Christmas. Most people will forget what they got for Christmas by New Years but they don't forget getting home caned foods. Great video Yankee, they look great and I am sure the taste as good as they look.

Yankee, I totally agree with you about the Ball Blue Book. My grandmother didn't even process her hot pack sweet pickles, Just sealed them up and turned them upside down on a towel on the table for a day. They sealed every time, no one ever got sick and died from that either. I used to watch her do the same with jam. Hot jars, hot product, hot lid, upside down on the towel. ping, ping, ping! Food Safety Nazi's is right! Pickles look great. Need to do my bread and butter here soon.

If you want crisp pickles, add 1/4 teaspoon of granulated alum per 12 cups of your water/vinegar pickling brine. Alum is found in the seasoning area of the grocery store. Learned this from an old grandma, works every time.

When I make sauerkraut, I put a couple of whole heads of cabbage down in the crock, buried in the shredded cabbage. When it's done you have whole heads of "krauted" cabbage. You can then use the whole leaves to make a number of recipes, like cabbage rolls. We used them to make an Armenian dish called Sarma. Great stuff. Thanks for the recipe.
