@araymous If you have 2+ UV in your model and you'd like to assign each picture to a certain UV set you may go Window > Relationship edititor > UV Linking > UV-Centric Click on your model and it'll be showing the names of your UV set on the left side of the window and rightside with the shader's texture. Simply first click on your UV set, then click on the desired texture. Hope it helps
@scratchliquid I believe the eyes are nurbs shapes. He is using their generic UVs. You can achieve the same look as the texture(diffuse) by using a ramp. Like he did with the skin experiment with noticable colors where does the sclera end, where does iris begin and finally add a solid black surface shader for the pupil...the ramp should look like his texture if you're using a vertical one.
