  • @crazycool1128 Did you purge them? You have to arrange them in layers in a còlander, sprinkle with coarse salt and press down; leave them to sweat for at least 1-2 hours, after that wash and pat them dry before using.

  • too much olive oil.And why fry the eggplant instead of slightly saute it?

  • @MsKimmova You can add shrimp but it won't be the original Sicilian recipe. With regard to the wine, in Italy we have wonderful Sicilian red wines such as Nero d'Avola... otherwise try it with a Syrah
