Probably you don't need ratios since all kind of models and proportions exist. Just use intuition and make them equal. Actually this vid is old :) you probably built it already.
the motor is called a servo and the motor goes in the nose of the plane i got to planes and love them rtf ready-to-fly version theres websites for them so yea and i think the battery hatch on the side is a goos idea :)

how do you connect the servo for the ailerons to the control surfaces!? I can imagine how it would work with two servos, one for each aileron, but how do you do it with one servo?
I will be doing a video on this on the weekend so that you can see how it all connects together. You can get one servo with two control arms that push and pull the ailerons in different directions but ill explain those to you aswell. Check back Monday and I will have it up for you.
