  • Granted this is an effecient way to clean a bird. However, as a foody, wouldnt it be better, as far as flavor is concerned, to de-feather the bird? Keeping the skin on keeps the layer of fat (and, yes, even pheasants have a layer of fat, despite what hunters might tell you) in order to keep the integrity of the flavor. Layering bacon on the breast or even just stewing or braising the breast meat does eliminate the possibility of dryness, but keeping the skin should help keep moisture in as well.

  • @855fitz it's the role he plays in the shoot. (Beaters flush out the birds with the dogs and then beat them onto the guns)

  • Thank you for this. As a small woman, I was concerned I wouldn't have the hand strength for this (having never pulled a pheasant apart with my hands), but with a pair of leather gloves, I was fine until it was time to twist off the wings. I cheated with a pair of shears.

    we do not know if i will for a turkey or goose but i think it might. sorry i cant give a better answer........
