Granted this is an effecient way to clean a bird. However, as a foody, wouldnt it be better, as far as flavor is concerned, to de-feather the bird? Keeping the skin on keeps the layer of fat (and, yes, even pheasants have a layer of fat, despite what hunters might tell you) in order to keep the integrity of the flavor. Layering bacon on the breast or even just stewing or braising the breast meat does eliminate the possibility of dryness, but keeping the skin should help keep moisture in as well.
