  • @osmozzz I have made picklese by putting cole slaw mix and sliced onions into a container. Then I add maggie, habenero pepper (to your level of spice), a few cloves white vinegar into the container and letting it sit for a few days. This may not really be the right way to do it but based on picklese I had from a restaurant and a recipe I have for it, it did come out pretty good. If anyone has a better recipe for this please let me know.

  • my djon djon water is boiling---I used a little hot water to soak to mushrooms and wash out the mushrooms just like auntie did until I got all the nutrients out and the water became clear

  • i got my mushrooms from sams caribbean and i am making this now and following your recipe.I am making a few changes in that i am going to use a sofrito to start instead of the onion and garlic alone.this is a home made sofrito that has onion celery carrots peppers and other stuff in it

    This was a wonderful tutorial and to hear creole speaking on the Yt was amazing. Great tutorial, the only difference in the way I rinse my rice off is that I put in a strainer instead of a bowl because it easier to avoid losing any rice.

  • Thank you and forget the haters. This is the best rice dish I have ever had, I am also from the Caribbean so I know rice. I have to find these mushrooms . I have some thoughts about Haitian cuisine and hair growth. Most Haitians have a full head of hair!!! Look at you and our Aunt. It must be the cuisine. please give this some thought. I am going to do my own research on this also. How often do you eat this rice?

  • @doucelait1 If you are refering to Pikliz, I have made this by combining white vinegar, Magi, a few cloves, thyme and Scotch Bonnet peppers in a jar or bowl and add cole slaw mix. Let stand for a few days before serving. I may not be totally right with this recipe but it tastes good.

  • Great presentation, however, I would take everything out of the package so you do not give free advertising.

  • You should boil the Lima beans separately and then add it to the rice at the end. Those Lima beans appear dark. 

  • @ThePandems Haitians never ever, cook beans separately we're not trying to keep the green color of the Lima beans, we want the beans to be infused with the flavor of everything that's the dish.

  • The "green stuff" is parsley, this is a staple fresh spice in Haitian cuisine. It's not "perci" in english however, in creole parsley is "pesi."
