Another way of cooking eggplant without too much oil, is to steam it first. Then, add the gravy as a final touch.

I rather leave the skin on the egg plant, it is full of vitamins, plus I like the taste.
If you think frying it is too oily, if you first put it dry into an oven for a while and heat it, it won't absorb as much oil as just frying it cold.
I also like to add a slice of ginger during the stir fry.
