    i make this type of meen too.

    it won't have a tendency to crumble if you sear the fish at a high temperature first.

    sometimes if available, i use 2 pans, one on a high temperature, and one on low temperature, and i sear the fish in the high temperature pan, and move it to the low temperature pan and leave it there to finish practically unwatched (it never burns or anything)

  • the place where i stay its hard to find authentic south Indian resto. Your seer fish fry recipe was a short cut to a great taste!!! Was wondering if i can try to do the same grilling it by applying bit of olive oil?? what do you say???
