sometimes if available, i use 2 pans, one on a high temperature, and one on low temperature, and i sear the fish in the high temperature pan, and move it to the low temperature pan and leave it there to finish practically unwatched (it never burns or anything)
the place where i stay its hard to find authentic south Indian resto. Your seer fish fry recipe was a short cut to a great taste!!! Was wondering if i can try to do the same grilling it by applying bit of olive oil?? what do you say???
