  • the silver leaves is not vegetarian. you can google search them. they are made using dead bodies of animals to get the thin texture.

    Thanx for sharing....but I do not believe all google contents blindly, so will sure try to research on it. I know it is not really good for your health but I can't believe that this delicacy is made using animal...I think, it must be some sort chemical...

  • @SuperVeggieDelight @SuperVeggieDelight It is real and i know it since i was a kid. they make it too thin by hammering between the layers of buffalo intestines within few hours of slaughter. while hammering, the tissues of the intestines are naturally left behind. the vegetarian sheets are also available but they are rarely found, particularly made and are quite expensive.

    so usually all sweet shops buy the non veg one for cheap price. many are not aware of how they are made. A few years ago the Indian Airlines learned about this, and since then stopped using them on the sweets served in their planes.

    You prepare the Kaju Katli mixture same as shown in video, when done, divide them in three bowls in equal amount and add colors or different flavors and then spread on top of each other in tray, when settle down, you will get tri color Katli or if you want to make rolls, spread mixtures on top of each other on wax papper and when settle down, roll them. enjoy!

    just 1 more question. when 2/3 different layers are done n when we set them on each other, do we just have to press layers by hands or by rolling pin?

  • Hi bhavana, I tried ur kaju katli receipe last week, but it did not came out well, i don't no where I went wrong, it just started oozing lot of oil atlast I had to squeze out the oil from the mixture n roll to cut it into desired shape, it has become very chewy n doesn't taste like the kaju katliwhich we get from d market, ur's look excellent. Bhavana could u post a recipe regards badami karachi halwa

    Not sure what went wrong if you follow exact same recipe. But be sure about timing for cooking. If you overcook then only it gets chewy. Will sure do badam karachi halwa. Enjoy!

    Rani Mukherjee!!! LOL. She looks more pretty than me. Anyways, this Kaju Katli can be kept outside about 3 days since there is no dairy product. It can stay longer than that but taste is not as fresh as if you finish within 3 days. Enjoy!

    When powdered sugar and kaju is used, it might happen. So I just made what Bhavna had texture like not to powdered kaju and also I used granulated sugar as Bhavna had in video. She said that powdered but I think granulated works great. Hope this helps.

    Only 1 tsp of ghee is used for 1 cup. So you don't realize much but as i said in video, be very careful about timing. It doesn't take too long. You have to stop cooking even before it gets brown b/c it is the indication of NO WATER REMAINING. SO before it gets hard, you have to quickly spread. Don't wory if you don't see ghee seperating out. Great luck.

    Just couple of minutes. Actually you have to be very careful as I said in video that if you over cook it will get hard so You have spread before it gets hard and it doesn't take more than couple of minutes to get hard. It's very instant. The whole recipe is very quick.

  • Those look beautiful and delicious. You said you don't add rose essence because your kids eat it, does that mean it is bad for kids or they just don't like it? Just wondering for future reference.

    Good question. YOu know how kids are. Sometimes they don't like strong flavors and specially this Kaju Katli taste better without additonal flavors. If you add other flavors, it ruins the original taste of cashews even you try to add very light flavor of vanilla or rose. And I have read/heard that essense are not good for health as well. Always try to use 100% pure natural essense. I use many times vanilla essense which I buy natural expensive but worth spending money.
