Another great one is "Sharp Dressed Man" by ZZ Top. I had an organist friend of mine do an improvisation on it and slowed it down. It was really beautiful. He played it on Transfiguration Sunday, quite appropriate.

I would challenge you to arrange those pieces and others you enjoy for organ, including variation of registrations. You are using good organ technique which is coming naturally for you. That really sounded good! Even with a classical registration, it has a good contemporary sound. That would also sound great on a theatre organ.
