I'm reading "Wild Fermentation", by Sandor Ellix Katz, (after doing B.E.D a few years back). I LOVE his root veggie recipe for kimchi. I'm guessing you've read his book. If not, I think it's great and fun to read. Also, sorry if I missed it when I skimmed your vid, but did you say you did use salt, or not?
Thanks! That's scary but cool. I liked Lorena's kim chi, so I know it turns out well even though I am still getting used to the concept of fermentation.

Very informative. I always thought you had to put vinegar or something in it but I guess it makes it's own vinegar when it ferments?

No, vinegar would halt the fermintation....
you just chp vegies, put them in am airtight container thats glass or ceramic and let it sit out
