  • Once I add the egg, I usually close the top and turn off the stove. That way the eggs cook a little bit and stay relatively liquid. I also use salami and a lot of black pepper. It's definitely a quick and delicious dish.

  • carbonara is good when made with cream but the original recipe is with milk ad egg yolk

  • Actually, the eggs should not be raw at all :) The secret is to beat them and put them raw directly into the pan with pasta and bacon together then COVER everything immediately. The steam and the heat should do the rest easily ;)

  • Real carbonara doesn't use cream, eggs and flour. That's actually creating a white sauce, and it is technically no longer carbonara.

  • @iOniV2 white sauce is not made with eggs first, second if you read the description of the video you can see that is written that in the original recipe there is not cooking cream -

  • Don't scratch the teflon-covered pan with metal! It will scrape off bits of teflon, which will get into the food. Teflon is highly cancerogenic. I prefer salmonella to cancer, thank you.

  • i try this like 3 times so far ... seriously love it ... replace the bacon by chicken and try also with HAM that was seriously awsome probably many ppl know that chicken can be use in almost everything so yeah chicken worth try it the bacon recipe is just also that good for the ham one i dunno something was missing probably should try to give something to the ham to give another flavor ^^ thx man for thosee recipe give so many idea even if i try already many things by myself.

  • @mpakisoul perhaps pancetta? I use turkey bacon instead of regular bacon (because it's what I already have at home) and it works well.

  • thanks for sending me the video. I am a professional chef in Melbourne. personally i would not cook it in this way. Maybe i'd try this at home though because it is interesting way to cook this type of dish. Personally i would use fettuccine instead of spaghetti and shaved Parmesan cheese. I would put a few slices of spanish onion before putting in the bacon. i really don't want to be eating raw eggs so i make sure the pans between warm to hot and then put it in. decorate it with chopped parsley.

  • Ciao, scusa ma sono d'accordo con chi ha scritto prima di me... la nostra amata dieta mediterranea è fatta di pochi ingredienti saporiti e semplici... io sono abbastanza abituata a vedere programmi di cucina americani che si spacciano per cucina italiana, e poco hanno a che vedere con la nostra cucina (troppo aglio, troppi condimenti superflui, troppi grassi). adoro la panna e ce la metto anche io nella carbonara, ma cmq non è la ricetta originale il titolo inganna.

  • @FedSsss ho tolto il titolo cosi siamo tutti più contenti , se leggete anche la descrizione dei video ogni tanto, potete vedere che ho scritto che la ricetta originale è senza panna. Concludo dicendo nuovamente che questo è il modo in cui io cucino , se a qualcuno va bene ok se non va bene ci sono cosi tanti canali di cucina in giro da potersi sbizzarrire come meglio si crede.

  • not bad..still i think there are many other more good looking recipies on youtube even the way they represent their spaghetti on dish looks much better but if i was offered this dish to eat i'd definitely try it lol!!! i didnt like the color of the sauce much and why didnt u let us see how u put the spaghetti on plate..anyway, Bon Appétit to u .

  • @ontheroadsofitaly sì non voglio far polemica infatti sto scrivendo in italiano così ci capiamo solo noi :) Però boh mettere la panna e scrivere "Italian recipe" capisci che poi gli americani vengono ad Ariccia e si aspettano di trovarsi la panna sulla carbonara :D Infatti poi è saltato fuori quello che ci vuol mettere il philadelfia ahahah il mio cuore tradizionalista piange a sentire ste cose! un saluto in bocca al lupo per il canale!

  • @Marknopfler88 vai tranquillo non è polemica assolutamente, nella descrizione del video è ben e chiaramente espresso che la ricetta originale non usa la panna, ma siccome sopratutto all'estero vedono l'uovo crudo come una minaccia per la salmonella ho inserito la variante della panna. ti ringrazio , ovviamente ogni piatto qualcuno cerca sempre di modificarlo un po a ragione o a torto onde evitare di ritrovarsi in rete un milione di video tutti uguali -

  • @ontheroadsofitaly eh lo so ma sono gli stessi che hanno i pregiudizi sull'uovo crudo (che poi viene comunque cotto in padella con la pasta, come fai tu!) e poi si ingozzano di porcherie industriali e cibo spazzatura... tanto vale istruirli noi che abbiamo una cultura gastronomica superiore :) ciao!

  • @thebronzedago no cream! Use just egg and bacon and parmesan cheese! If it become too dry, add a bit of the water where you cooked spaghetti in :)

  • Scared of salmonella, I'm a bit scared of that too. That's the reason why I never tried to make mayonaise. But I think the heat of the pasta should be enough to kill the bacteria. I never had any problems eating Carbonara.

  • @Raymond04160 yes , if you cook the eggs is ok, in the original recipe the eggs are uncooked, must say me too i never had any problems ...until now with carbonara ;)

  • @tdjtx hi Tom, no , the Creme fraiche is very acid , the one i use is called cooking cream, if search in google images you can see it i just tried is the first image that comes up. ;) thank you ask anything

  • @ontheroadsofitaly if you live in the usa the heavy cream "panna" is equivalent to "Heavy Whipping cream" or simply "Heavy cream" there are different brands you can find it in the refrigerated section with the milks in most supermarkets hope this helps :)

  • quanti errori...

    1- la pasta calata nell'acqua che non bolle.

    2- soffriggi il bacon (ci vorrebbe il guanciale) senza la cipolla?

    3- la ricetta vuole il latte e non la panna.

    4- il guanciale va sfumato con il vino.

    5- non puoi usare un forchettone d'acciaio in una padella antiaderente...dai!

  • @ontheroadsofitaly figurati, mi hai fatto venire una voglia di carbonare incredibile cmq, così ho appena finito di farne una porzione, ricorda, 1 uovo a persona e vino bianco per sfumare ( e nelle uova quando le mescoli con il latte e il formaggio metti pure un bel po di pepe) ;)

  • @Marknopfler88 ti sbagli, nelle uova ci vuole il latte per renderle più leggere, si puà anche mettere dell'acqua gassata, ma non la mette nessuno.

  • @Streamline1991 si può mettere, se ti piace, certo. Però la ricetta tradizionale prevede solo pancetta, olio, pecorino e uova, neppure le cipolle. Lo so, è strano, ma è così, ho parenti romanissimi e la tradizione impone la semplicità più assoluta, se ne frega di rendere un piatto più leggero o più presentabile, la carbonara è rustica come i romani: spaghetti, olio, guanciale, parmigiano, uova. Il latte, la panna, la besciamella sono aggiunte che si fanno al nord o all'estero.
