It's a guitar synth - one track is the guitar, one is the guitar going through the synth which registers the note being played and plays a MIDI file of the same note, in this case using a drum sound.

Actually, it's all triggered by the guitar synth. It's really not as complicated as you make it out to be. My legs are simply moving to the rhythm. I think dancing on pedals would be harder to do than using the synth.
