It's kind of a complicated answer but i'll try my best to explain:
Most fixed gear stuff comes in some form from velodrome racing. aero-rims (not usually aerospokes) are used in track racing because they give you a slight advantage in terms of aerodynamics. it gives you around a .2 percent speed advantage or some small thing like that. this makes a difference on a track. bike messangers take that from velodrome, and there are a couple reasons why they only run the front:
my friend has only the front one because of aerodynamics and also because (according to him) they flex because of the carbon fiber and with two he says you get a weird feel and its also slower

1) messangers say it's easier to run a bike lock through them fast
2) theyr expensive
3) the back ones wear out FAST because of the backwards pressure applied when skidding
4) they see racers only threading one, because in racing the seat tube covers the back wheel, making it pretty useless to run a rear aerowheel
