@crewlla ~ I do believe all milk in the US is homogenized....unless it is raw. Which raw milk is illegal to seel for human consumption in most states...

@meow98 - True you can do that. Sometimes though the cheese seems 'mushy' after that - so for the texture reasons or needing it shredded for appearance it can still be shredded first then frozen. But you are right...if looks and texture don't matter...just taste....freeze then crumble works the same to keep cheeze longer.

Do you know how long the blocks of cheese last in the refrigerator??? I know they age cheese, but don't know if it will go moldy if I don't open it. Thanks
I know cheese that has not been frozen already lasts for about 1 month in the fridge. You can lengthen that time by first wrapping it in wax paper (helps wisk away moisture). I would think that the frozen cheese once thawed would have a month maximum as well, but moisture and condensation add to the factoring so it's not exact.

PS: Don't gag - you can cut off mold and use the rest. Cheese is often molded to age it.
Over time (and extra gas to the store saved) they really do come in handy to have a full 'stock' at your finger tips! I love BOTH my freezers (o: (Hand me downs I couldn't refuse!)
When I freeze milk, I pour it into one cup plastic containers, let it freeze, then remove from the containers and place into a gallon ziplock freezer bag and place back into the freezer. When you need a cup of milk, just pull out one block, place it in a bowl and let it thaw. I have never had a problem with the blocks sticking together in the ziplock bag.
I didnt know you could freeze cheese. I will have to try it.

To the best of my knoweledge 6 months is about the window for dairy (milk especially) in the feezer. Once thawed a week is the safest window.
