It seems a bit different to the sheet music provided, some extra half step eigth notes :O Sounds way better IMO :)

If anyone can tell what it is exactly he does differently to the sheet music that would be greatly appreciated :)

E.g. @ 0:22 - 0:23 it doesn't seem to follow the sheet music, it has an added in sound which sounds like a clipping of notes, however on purpose. Also, if someone knows what this term is called, tell please :)
