If you check the Hampton Court Palace web site it tells you somewhere which weekends (and special holidays) the kitchens are staffed and real cooking takes place. It's one weekend a month but which weekend may vary (currently it's the 1st weekend every month).
The guys who work there are in Tudor clothes to be in keeping with the setting, they use replica equipment and utensils and actually roast on the one remaining, working, roasting hearth. They are a mine of information, talk to them
