just so you know its not "simmering" when you cook vegetables in oil...at that heat you are sauteing them and if the heat was a little lower there you would be "swetting" them...just sayin..

To keep a pot simmering, one brings it to a boil and then reduces the heat to a point where the formation of steam bubbles has all but ceased, typically a water temperature of about 94 °C (200 °F).

@gumby83 Yes, Chicken Chili has quite a different texture and appearance from traditional beef or red chili. Its as different as the number regions there are. Give it a try, its great.

little thin for my taste, although i never had chicken chili before. Maybe alittle bit of flour would of made it more of a gravy.
