  • looks like a different style of cooking to the usual burner setup some chefs use. The yellow flame setup he has is set for less heat than the roaring burners you normally see.

  • @Huba588 I've seen woks up to $200 and burners from $2000-$4000 US dollars. Keep in mind, that's for professional grade stuff.

  • high heat is very very ideal for chinese/asian cuisine. Thats why I use a separate burner, because the heat must be evenly distributeed to mak e the vegetables crispy. And for good meat stir frys its needed very high heat.

    In ancient china its not a secret that the preparation took long time, but the cooking not long.

  • what makes your mom say that? is she a doctor? I believe that this is the main secret of the chinese cooking- the contact of the food with the flames that gives it the specific taste a of heated iron/smokey.

    And as to this dish, I literally lived on it for 6 frickin years! The point being my junior middle&high school cooks obviously know not many dishes except this one. Ive NEVER had this dish after graduating: ( cause it brings bad memories of a life without choice...hahaha

  • If you like Asian wok cooking, you can do it in your own home. It's easy and simple. I learned from my mother and have posted a few videos including Care & Feeding of your wok, What is a Wok Star and Ho Wok Mei (Good Wok Flavor).
