LOL if you soak the leaves in water for a couple of hours before eating them the bitterness will be removed. It also helps if you use a touch of vinegar that actually turns them sweet ! Otherwise I'd leave them as a Pot Herb. Oh BTW The World Food Bank Ranks Dandelions at number four on the most nutritious edible plants !

I love them, in spring you can make a delicious salad, just use dandelion leaves, maybe some hardboiled eggs add some salt and some tasty oil like pumpkin seed oil, it tastes great!

and i think the younger leaves are less bitter than the larger, old ones
