Not exactly. When you memorize songs yes. But when you step into the studio and you have to play the song the first time, without having heard it, and then they change keys on you when the singer walks in...you need a chart. The best studio players in the world use charts.

Yes, I do that to mute the chord with the left hand. It's just a habit, but sometimes it is required to make the strumming sound more percussive.

It's actually a G5. 2nd finger mutes the 5th string. Fingers 3 and 4 play the 3rd fret of strings 1 and 2.

look at the charts all the time.
for example, learn the
progression 1, 6, 4, 5.. or 1, 4,5, millions
of songs you will hear the exact same pattern.
