On 500D, the FPS override function doesn't work perfectly when recording a movie in 1920x1080 resolution: the exposure flickers between the desired and darker. It seems to me that the camera is probably alternating the shutter speed between 1/20 sec (dark) and 1/fps (brighter), so the flickering effect becomes more pronounced the more you reduce the fps from the standard 20 fps (again, on 500D).
However, it doesn't occur until recording is started, and not at all if recording in 1280x720.
