Esp with the Pavoni it's very coffee-related. She'll punish you for feeding her old/cheap beans.
Naked Portafilter is the portafilter with the bottom taken out, often referred to as "bottomless" aswell. Some ppl think it makes for a huge improvement. I doubt that but it's definitely a nice analytical tool and fun and sexy. Check my vid response if you want..
It looks like you lifted the arm all the way up before fitting the portafilter. Am I tripping? If not, and you did, how? If I tried that there'd be a shower.
You can raise the lever quite a long way before the point when the water is forced through. If you lock the coffee in and then raise the lever, then air has to pass through the coffee to fill the void in the chamber, and this can disrupt the coffee puck. I find it best to raise the lever to just below the point where water is forced through. then lock in the portafilter, then gently raise the lever to let the water.
Sweet, I just did my first roast on a Behmor 1600 with Sweet Maria's Monkey blend. Now I am pulling what looks like 90% crema that mostly dissipates quickly to about a 1/4" inch on top. Very similar pull as yours but without as much red. It is beautiful to watch but I am still getting a few sinkers. I am using my HX machine so I am not sure how my Pavoni will work yet. I have to get more coffee and try it!
Made it myself. My pavoni is 30 years old and a little battered. Portafilter wasn't in great nick, no i did't feel bad about taking a hacksaw to it....

did you bolt it to the table or something? i can't lift the lever before inserting the portafilter without throwing the machine around..

I did the same with my portafilter, but used a holesaw instead. It really is a good visual aid.

Fantastic shot, used to have a europiccola, and when watching this i kind of want to get another one and cut out the portafilter.
