The orange was significant because earlier in the episode Jane said he would do anything to catch Red John even if it resulted in his own death. The orange is significant because if he had died while attempting to catch Red John, he wouldnt be there enjoying one of the pleasures of life (i.e. - The Orange).

they should have ended it with some kind of red john thing--like after he sniffs the orange it goes to that blind lady and she's doing something...or something w/ red john, to make for more of a cliffhanger

Prelude in C Major is such an elegant piece and I will never listen to it again without thinking about the Mentalist. A truly beautiful scene.
