can you do the temples in any order you want

With a little effort, you can do the last three out of order. But, for each temple you need the main item you found in the previous one or in it's surroundings. I guess you can do Great Bay Temple before Snowpeak if you wait till the 3rd day and get Epona to hop over the fence, but then again, you need the Goron Mask (which you can get before Snowpeak, of course) and if you get the Hookshot in Great Bay, you can even go for Stone Tower before beating Gyorg. Hope that helped^^
