  • I managed to procure some Marscapone cheese, it was okay, but actually this dish wasn't up my alley, i wasn't really fond of the butternut squahs but it was a great experiment.

  • What's the difference between chicken broth and chicken stock?

  • @Michael55443 Generally broth contains pieces of meat or vegetables, but the definitions are almost entirely interchangeable. It'd be fine to use either.

  • As with any recipe, you take what's given to you and make it your own. That said, I made this last night using chorizo sausages, linguini and Pecorino Romano [sheep's milk cheese] and it was fantastic. Definitely another win.

    The eastern shore of VA in Melfa. It's very country, so naturally we don't have marscapone cheese. I would have to drive either 1 1/2 hours or 4 hours in order to obtain any.

  • @Breziil21 I did check out Food Lion and Wal-Mart, I was certain Wal-Mart would have it, but they didn't. I could have sworn I saw it there, but it had to be elsewhere because it wasn't. When I spoke to the DSN manager about ordering it, she looked at me like I was nuts. So I backed off, I'll try the small gourmet shop in town, but I don't foresee it being very promising, they may be able to order it, but for an insane price.

  • Nice dish. Maybe try pancetta next time. And the golden Italian rule number one that all Italian pasta cookers live by: you add your pasta to your ingredients - not your ingredients to your pasta.

    haha, exactly the same thing for me (the only difference is the age), i even got one of my friends to watch chef john's videos. foodwishes is imo the best channel to improve your cooking abilities and i've yet to find a restaurant where i live with better cooking than mine!

  • I always follow recipes exactly the first time I make them.  Then if I make them again, I will adjust as needed. I just made this for dinner and I can't think of any change I would make to this. It was absolutely perfect. Thanks for a new go-to dinner on the weeknights!

  • Another recipe that would put me in hospital, and would be difficult to make dairy free. Getting really disheartened by all the cheese-necessary or cheese-specific recipes. Yes they make non-dairy substitutes for many things but they often don't work as well. Not to mention there's no non-dairy parm sub or mascarpone sub (vegan cream cheese doesn't even come close). Please Chef John. My food wish is some lactose-allergy friendly options! Not vegan, I like meat just fine. *sigh* And the turkey "

  • I have to say I am shocked at how one man who puts a video about his recipe idea on youtube can bring out this large amount of interesting conversations on his comment site. Lol everytime I watch one of his videos 80% of the comments are people fighting. Its never a dull moment on foodwishes. I do however love seeing so many people sticking up for him. :-)

  • @TubeGuest5178 Essentially you need to find your market on youtube. Chef John decided to make recipe videos focusing on the food, not the chef. Once you find your genre you need to get subscribers, and essentially views. Once you hit a certain level you can become a youtube partner. They (youtube) in most cases will give you a % of the proceeds from ad revenue on your videos. Most people make a enough as a side job. Very few reach the 6-7 figure range.

There are people making hundreds of thousands of dollars from youtube alone. Note, you have to have something interesting to post, and YOU have to be interesting to watch/listen to, else you won't get views.

Personally as someone who cooks at a level much lower than @foodwishes I would say he has the latter quite often. Also what a great job even if he made hardly any money imagine doing what you love!     Being muslim I can not eat ham or pork, so ill try a turkey substitute. Or maybe a beef sausage?

    I've made butternut squash ravioli and i must say i dont fancy the taste of butternut squash one bit :/ so I might just try substituting garbanzo beans for the squash.

    Any tips or ideas?
