If possible you should avoid touching it, but if you have to you can. Make sure to wash your hands afterwards though. What canister are you referring too?
DO NOT water wash between the developer and the blix. The developing needs to be stopped as soon as possible, so pour in the blix after the developer ASAP. A water stop bath is not enough to stop the development of c-41 film and can lead to a fogged brownish-base colored negative. This has been my experience, but I am sure all kits vary a bit, since I am using Flexicolor chemicals with a separate bleach and fix. Overall, this is a good video tutorial.
...even with the fare (dust and scratch removal) from my scanner i can already see 50+ scratches :S, and other day, they gave me perfectly developed negatives, beautiful colors, contrast, just amazing, so i wanna do it myself, i can't trust some dirty mexican lab now, and i wanna know, if those pinkish negs were product of just one minute with lower temperatures or so, please answer i'm kinda desperate though LOL and i cannot find any example in the web, just B&W ones...

...more colors and beautiful contrast, some negs appear pinkish instead of brown/orange (i know, WTF?), it's a different story with each lab, i just found one that does it perfectly but sometimes they leave their fingerprints on them or scratches, the other lab, i don't know were it is located, because i went to a lab that sends the negs to 4-6 different labs, some do it uglier, some not; once they scratched my neg as if a cat was playing with them, no kidding, half of my pics were scratches!...
I want to know what happens if some variants change, I mean, if i do this but the temperature at the last 1 minute and the developer gets cold (first chemical) by one degree, what happens? do my negatives don't show full highlights?, and if it gets hotter by one degree at the last minute, just if the water gets the chem warmer, do i get more contrast? I just need to know what happens, because at every lab i give my negs, some appear transparent (even the words at the sides "KODAK") some show...
It would be more helpful if the video also showed how to get the film from the spool onto the reel using a light free" dark" bag. I also found the pots and pans in the sink to be a distraction. I kept wondering if they had some relevance to the process.

Do you not like film grain? Its just you said the film that you developed recently had very fine grain.
I love grain, in fact i would say i even love dust, and scratches. All of films imperfections.

Temperature changes cause under/over developing which just decreases/increases the density.
The film will appear milky if under blixed, or if the blix is exhausted.
My only guess as to how you get pink color negs is that they didn't prewash and/or stabilize them.
If you want a good lab go to APUG.org and post a thread, you will get many responses. I use a local lab, never had a problem with quality from them.
