what is he saying at the begining (right :13 seconds) about separating the fine particles with the coarse grinds? He's talking about some method but I can't hear him enough?

He describes that some people will put the grinds through a fine mesh sieve before brewing; the fine grinds, or dust, get sieved out and only the coarse grinds are placed inside the press pot. I believe it makes the resulting brew "cleaner".
