  • Mayo is not one of the 5 mother sauces.

    There are a lot of demos on making mayo, but yours is the only one I've found that shows people how to fix mistakes and how to avoid off flavors. Many thanks.

  • i tried doing mayo today! i did the following steps accordingly but when i stirred and added oil bit by bit, it stayed at its original state(yellowish) and did not turned into a thick paste! can anyone tell me where i've gone wrong? or which steps i missed! :(

  • @tisisalamething Fresh mayonnaise is a sauce which will thicken when in the fridge, and the yellow color can depend on the egg yolks used, I always use free range eggs, so the yolks make the mayo more yellowish. I also only use Safflower oil, which is much more healthier than other so called "healthy" oils like canola or corn.

  • @Raybee it will harden when cold due to that being the natural tendency of coconut oil. but the sat fat naturally present in coconut oil is good for your body. i just learned to take out my "mayo" about 15-30 min before i need to use it, or sometimes i'll pack small individual portions in teeny ziplock bags

    the egg-industry dos store the eggs at high humidity (90%+) and at low temperature (0-5°C) to keep the eggs from drying - there also can be used something at the cleaning-process to close the pores also to prevent drying.

    the watertest only shows how much the waterloss was since it was layed

    the higher the waterloss - the more the egg stands up

    if the egg is stored without lossing water - it will also after 30 days still show it is fresh with this simple test

  • @imthefrogman Mayo from the store doesn't use mustard. Mustard adds the yellow color and makes it taste better. Believe me, if you taste store mayo and homemade, you'll know that yellow is better. :P

  • The faster you can mix the ingredients, the more stiff the mayonnaise will be. It also helps make the mayonnaise taste less oily. I think this is because the suspended oil droplets are smaller. For the same reason, they homogenize milk.

    A whisk or a mixer is not always fast enough to get the consistency that you want, I used a blender at high speed and it turned my runny mayonnaise into a much thicker product that tasted less oily.

  • @gauravenigma make surre to use mustard.  Its a must. Mine came out runny too, but I skipped the mustard. After, I used the mustard and presto! Try adding minced garlic,fresh basil and crssuhed reds (w salt and pepper). Its great. Some add crushed bacon. Thats good too.

  • Why do you keep saying everything is too oily? Everyone knows mayonaise is high in calories. If you are watching your calorie intake, you can make a choice a simply choose not to eat it.

  • The Mayonnais you buy in the store is highly fattening, making it naturally reduces the calories by almost 40%, Use of canola or Safflower oil, or use a mixture of light olive oil (light in color and taste) mixed with Canola oil. Use 1 cup of Canola oil 1/4 cup of Olive oil, 3 egg yolks, 1 tbl. of Lemon juice, 1 tbl. of white or red wine vinegar, 1tsp. salt and 1/2 tsp. of Sugar, I use an immersion hand mixer to make mine. Follow this recipe, it works very well.

    I make homemade mayo with coconut oil and have absolutely no fear of calories because of this, essentially my body burns the coconut oil almost instantly :) so I can have my fatty mayo and not gain any weight. It works for anyone counting calories (just don't count the calories in the coconut oil)

  • weird. I never seperate the eggs and always throw all the oil in at once. But I guess my type of blender makes a difference. It gets nice and firm if I work from the bottom. And it never gets curdled.
