I can't get it either, so don't use it, but the recipes are still yummy without it.

Radhey,
Hing is important because it replaces garlic and onions. You can purchase it at most Indian and Asian stores or market. Or u can get it in India CHEAP

Would adding a bit of garlic while cooking the spinach be alright? Is that something an Indian cook would do? Do Jain practitioners eat garlic?

As far as I know Jains don't eat garlic because it's a root vegetable and eating it would kill the whole plant
