When logging in to Ubuntu (where you type in your password) there will be a drop menu at the bottom of the screen that says "Ubuntu." If you click it you can see an option called "Ubuntu (Classic)". This is the GNOME GUI without Unity on 11.04. Hope it helps!~
Yeah I don't like the Unity ui, but ubuntu is still great without gnome. It still has the apps, wine, amazing speeds, and runs on all my old celerons and pentiums. you would be surprised what you can put linux on!

If you really don't like unity you can get arch linux. I believe it has the same desktop as old ubuntu. But I agree unity sucks.
