I do sear all sides of the salmon. The time depends on the size of the fillet and how you like it done. Many prefer salmon medium rare. Let it cook the longest on the skin side, and then shorter on the others. Just check it to get to your desired doneness. The rule of thumb is 10 mins total per inch. Thanks, hj

but for searing, you need oil that can withstand high heat. if not and u're just trying to cook the fish through, use olive oil.
