You know that in many ways the US is positioned to be the best cuisine in the world. With the various heritage they can draw on... Hells Kitchen always neglected the Heat (ironic) But the spice of both Latino and Indian are within their grasp, No excuse. They should lead the world .

@TRWolf: Cheddaring is the correct term. The style of cheese originated in Somerset (town of Cheddar) and the process of creating it was named after the town as well.
