  • @FromUnderTheRock hey chef buck, i just wanted to ask Lettuce, Apple, Celery, carrots + Vinnaigrette (apple cider vinegar + oil + cinnamon) -maybe add honey at vinnaigrette.

    what do you think?

    Carrots are almost always are smart move --sounds tasty, and a little healthier --which is a good thing. Most salads I prepare I serve with oil and vinegar. I LOVE a waldorf salad, but the mayonnaise dressing definitely doesn't appeal to some folks.

    egg yolks+sugar+mayo+sesame oil+mirin/rice wine vinegar (not sure about the mirin/sake though) for dressing

    Mangoes+Crabstick+cucumber

    if i remember correctly (it's been months since i had this); it was really one of the best dressing i've had and especially good w/ maki (made by excess ingredient for california maki. lol)

  • I think yogurt might work....especially a thick Greek yogurt...perhaps with a dash of cinnamon so it's not so....yogurty.

  • Yes...I think walnuts are best, but I find either suitable. Hmmm...I wonder if cashews would work? Some folks add grapes, but that doesn't really grab me.

  • I just can't square apples and mayo together, though I have had some lovely salads involving apples and vinaigrette. I have nightmares of the sweet and savory being mixed into a cauldron of heat-seeking death misers. I'm frightening myself by even considering things like Indian food. My girlfriend is Lebanese and when she talks about cinnamon (which my Midwestern tastes associate with buttered toast) and speaks of it with beef, I get the shivers of Orion. But I bet yer salad is good for normals.

  • I loooove Indian food...give chicken tikka masala a try...it is the best. Cumin, corriander, curry, tumeric, garam masala...My spice rack would be a lonely place without these flavors.

  • I've had curry in my time and I hated it. I think it's probably really wonderful but I was raised by a father who was a truckstop cook and a mom whose idea of mexican food was fritos with some hamburger spiced with those lil paper packets. I've lived a sheltered culinary life.

  • Taco-burger. Take a burger, slap a taco in the middle, BOOM instant meal. just add some fries to it if you wanna feel fancy

  • I guess it does sound strange if you're not familiar with the dish---which I thought many might not be. It actually is a salad made famous by the Waldorf-Astoria Hotel in NYC. It was created by Oscar Tschirky, the maître d'hôtel in 1896. The combo of nuts, apple, celery, and mayonnaise is delicious--I always get brownie points when I make it :^)

  • I've served apple pie with melted cheese in restaurants before (I think it's a northern thing)-- people actually ask for it. My mom used to serve us a pear half with a spoonful of mayonnaise and shredded cheese as a desert. I think that's a southern thing.
