I was trying to do everything with only the Vegas car, but after much frustration I ended up borrowing a jericho from a friend so I could do some of the harder ones :)
I would have used Jericho for most of the jumps, since it's ligher and does not crash into stuff as easily as the Vegas. But as you're a crim, I understand you can't :P
