  • the trouble with this video is squab legs and breast have different cook times. And per tom colicchio, if you cook squab breast by any point further than medium rare...it begings to taste like liver. It has to be medium rare period. With that said, squab is a rich version of chicken. Absolutely delicious.

  • French Looking plate of food, but asian flavours, that looks real nice and sounds good! I never had squab before, but I would love to try this! At 2:55 what is the juice in the pan from with the squab is that all natural?

  • @lycheesack late reply I know, but the "juice" looks to be roughly 30% squab drippings and 70% butter from the beginning :)
