i am sipping a bomber of this beer , right now ... it's a tad on the thin side ... i'd be happy if it were thicker & malty-er ... would be perfect, at that rate ... this beer would be perfect with any spicy food / cuisine ... not just Mexican ... I can see Thai pairings, Vietnamese and even curry-intensive Indian food marrying swimmingly ...

My mouth was seriously watering while watching this one. Great looking Ribs, I've been wanting to smoke some myself and think I will go with your recipe. Would it still be pretty much the same method with a grill/smoker combo if I don't have my own BGE?
@adramatictheme The ribs were delicious! As far as making them yourself you should be able to get similar results on just about anything. The keys are to use indirect heat, keep the temperature in the 250-275 range and make sure any wood chips you use are well-soaked to prevent quick burning.
i watched this while fasting...... my mouth is watering..... i will def use this recipe....love the food and beer pairings..... i was curious about the chipotle rogue sounds alot like the german smoke beers that i just can't seem to enjoy at all without the proper food pairing.....
@cpalmer2312 The ribs came out great and the dry rub is spicy and sweet. I've had a few smoke beers and agree that they need to be consumed with food, like chili beers.
@GameShowManOne Thanks, but those guys do a great job and have a much bigger audience. I'm having fun though and don't plan on slowing down. Spread the word and keep watching!
How much does your Green Egg cost you? I live in an upstairs apartment with a fairly sized balcony and that thing looks like it would fit just nicely on it so I can still BBQ.. George Forman grill just doesn't cut it for these cuts of meats
@CantStopWontStop818 The Big Green Egg is a bit expensive. I have a Large which retails for around $700 or so. They make a Small and Medium which are less expensive but just as good.

@dechm4af The beer is OK but not my favorite style. Some people love chili beer and this is a good one.

@highwayonestrat Yeah, a spray bottle with some apple juice is a great way to add some additional flavor during the cook. I'm glad you liked it!
